Description
Garganega grapes grow up in vulcanic hills.
The medium age of the grapes is 25 years and the yield is very low – 60/70 quintals per hectare.
The grapes are hand harvested in October and dried for 20 days, then the berries are separated from the bunches and pressed with a pressure of 0.5 Bar.
It comes a fermentation for 15/20 days under a controlled temperature.
The wine is decanted in stainless steel tanks where it ripens on the lees, with periodical remuage till May.
Then is filtered and bottled.
The color is staw-yellow, with a delicate and harmonious scent , well bodied, balanced between its acidity and mellowness
