Ingredients: 100% ewe’s milk, salt, vegetal rennet, milk enzymes
Description: This is the most celebrated of the cheeses produced on the farm, full-flavour, vegetal aftertaste given by the particular rennet (seeds of wild artichoke). It acquires a strong smell of herring during the ripening. It has a protective covering of organic olive oil and ashes.
