Description
The Gianni Calogiuri’s family produced Vincotto since 1825 from two different kinds of grapes: Negroamaro and Malvasia Nera.
Nowadays according to great international chefs, the Vincotto® originale is an elixir sweet and velvety with delicate and harmonious flavours of spices, grapes and plums.
The grapes are left to dry on the wines and afterwards on wooden trellises, then must is boiled very softly for over 24 hours till it is reduced to one fifth of the initial volume.
The original Vincotto® is very rich besides of polifenoli (natural antioxidants).
Raspberry Vincotto is a versatile vinegar. Mere drops can be used as a condiment over antipasto, roasted meats, salads and vegetables such as cooked potatoes (preferably cold) to enrich their flavours. Try combining it with a salad of fresh fennel, carrot, lettuce and celery. Splash it over ice cream, panna cotta and fruit sorbets if you want to taste a dessert with a difference!
