Technical specifications

 

Description

Production: throughout Italy from the Alps to Sicily, in mountain areas.
Color: dark amber with reddish tones to almost black, depending on production area.
Crystallization: absent or large crystals.
Smell: strong and sharp, floral balsamic, tannic.
Taste: Similar to the smell, strong taste at first with a aftertaste more or less bitter depending on the source. Properties: improves blood circulation, urinary disinfectant.
Uses: as table honey, excellent with aged cheeses such as Caciotta, Grana and Parmesan, Asiago, Pecorino. Recommended for the elderly and children.
