Pasta production - the White Art - that has made Gragnano famous in the world, goes back to XVI century’s end, with the first family – owned pasta factories.
Gragnano inhabitants knew very well wheat processing and they have made it an economic activity: not at random Gragnano owes its name to a “praedium granium”, agrarian property where gens Grania, of Roman origin, dedicated herself to wheat processing, and where later some rebels refuged and founded an urban settlement – “Granianum”.In the second half of 1700 the laboratories were extended and the first real pasta factories were born. There was an enthusiastic movement to increase the production and the marketing of pasta, that achieves an high quality, recognized at national and international level.
From 1950 to 1980 the White Art is in a critical situation, that ended only about the year 1990 with the when some pasta factories were modernized with high technologies, but makes difference above all the Pasta Cottage Food, with the recovery of Art of making pasta old-fashioned and with passion, according to the strict observance of ancestors’ rules and the secret knowledges of maccaronaro tricks of the trade, tested on the ground by the fathers – makers of pasta and passed orally to sons. From here derive the top quality of their pasta.
