Grape: Trebbiano, Colombana and Malvasia, carefully selectioned
Culture: cordone speronato
Density: 2500 plants / hectare
Age of Vineyardi: about 37 years
Grape/hectare: about 130 quintal
Grape/plant: 1,5 kg
Vintage: manual, in small boxes of 10 kg, generally at the beginning of september. The grape is set on reed mats to dry up until the end of december.
Vinification: when the alcoholic grade is over 15 degrees, we light remove the stalks from the grape and press softly. Only the best most goes into the “caratelli” made of oak or chestnut wood.
Classification: Vin Santo del Chianti doc.
Maturation: from three to five years in the small barrels (called “caratelli”)
Longevity: over ten years
Colour : gold yellow, it remembers the colour of thousandflowers honey.
Flavour: warm notes of dried flowers, of candies, of dried fruit .
Taste : it is persuasive and warm, lively, round and complex in the mouth. Lightly sweet.
Gastronomy : it can be used also fresh (5°) as aperitif. Following the tradition it is the wine wich goes very well with cakes, every dessert based on hard pastry and all convivial moments.
Alcohol: 18%
Service : to unkork at the moment of the use. When the bottle is open, it doesn’t fear the oxidation.
Temperature : from 5°-16° depending on the use.
