Description
“Sparkling wine” arneis grapes picked around mid-september undergo temperature-controlled fermentation to obtain the base wine, which is bottled in the following march for refermentation and maturation on the yeasts for approximately two years. Following this, the operations of “remuage” and “degorgement” prepare the wine for release, which takes place about two and half years after the vintage. A fine, intense, perlage and persistent foam add to a full, compact straw-yellow colour, while the nose is complex, with distant reminders of fruit and a subtle hint of yeast and breadcrust. It has an intense flavoursome taste with a nicely bitterish finish. excellent as an aperitif and for toasts at any time of day, it makes for elegant company throughout a meal, preferring though hors-d’oeuvres, well-structured first courses and delicate main dishes.
