Olive Trees: Owned and grown in San Clemente – Montefalco (PG)

Altitude of the trees: 350m above sea level

Planting density: 6m x 6m

Pruning: polyconic vase (olive) growing system

Cultivation: organic

Olive varieties: San Felice 100%

Olive harvest period: 5th – 15th October

Picking Method: by hand and mechanical

Pressing method: Continuous cycle system

Production Technique: the olives are placed in boxes and pressed within 24 hours. Stages of pressing and extraction ocurr without exceeding 27° C (cold pressing) via a continuous system. The oils obtained are stored in stainless steel containers and left to decant naturally.

Average Acidity: 0.2% Oleic acid p/p

Average Peroxides: max 5 meq O2 attivo kg

Fruit: medium
