Description

The Santa Brigida I.G.T. Colli della Toscana Centrale (our Supertuscan) is produced in the vineyards of Fattoria la Ripa named La Volpaia and La Leccia, situated approx 400m. (above sea level) and exposed to south, but low–fertile, alkaline and rich in carbonates.

The vineyards are nurtured using the “Archetto Toscano”(Guyot) system with an order of planting of 2.70 x 0.80m., with a maximum production per hectare of 7000 kg. of grapes.

The production from 2006 is carried on in full respect of the organic farming system and therefore La Ripa’s products are certified by Bioagricert as
ORGANIC (“Biologico”)

Grape Varieties Blend:

Sangiovese 70%, Cabernet Sauvignon 30%

Vinification:

The vinification process is carried on separately for each variety; it is of the traditional method by means of tumultuous fermentation at a controlled temperature (25º/30ºC) with numerous “Délestages” to promote the maximum extraction of colour, followed by the Malo-lactic fermentation

Maturation and Refinement:

the ageing process begins with maturation in Barriques of French (90%: Allier, Nevers, Tronçais, Vosges) and American oak (10%: West Cumberland) for about 1 years. The long refinement is carried out in bottle for minimum one year.

Organoleptic Characteristics of the wine (vintage 2005):

Colour: Dark ruby red;
Bouquet: Very intense, scents of black currant and other small fruits, toasted oak and spices;
Flavour: Fresh start followed by supple
sensations, great tannic structure, ending with
licorish, very long persistence.
