In these preserves the dominating aspect is given by the perfect combination of the sweetness of the eggplant and its typical consistency. Both to the nose and to the palate it has a soft balance between sweet and bitter.  Excellent when served with mildly-aged soft cheeses. Also perfect with boiled beef; it’s not to be underestimated with smoked fish.
