Description
The business was born in 2001 thanks to a plan and an idea which were carried out in Contrada Salmè where the Calì family owns a great deal of land since over 3 centuries. It represents one of the best Sicilian microterritories for the production of ancient and native red grapes, such as Frappato and Nero d’Avola, cultivated since the time of the Greeks, when the ancestor of Cerasuolo di Vittoria was produced, the so called Mesopotamium wine. On the one hand, the project developed by the business is agronomical: during few years we have been able to plant the business 15 hectares with vineyard, now cultivated in a regimen of low phytosanitary intervention and in a perfect balance among the traditional cultivation techniques (from hoeing to pruning up to the grape harvest). On the other hand, there has been a process of renovation of the blocks before in existence during which, thanks to little “archaeoenological” discoveries, an ancient millstone fallen into disrepair over the centuries has been found, becoming the seat of a cellar equipped with up-to-date technologies. The finishing touch to the die is saved to the delicate stage of the bottling, with cutting-edge equipments essential to respect the quality of wine and maintain it unimpaired.
Under the careful and passionate guidance of a well-known oenologist in the International oenological landscape as Prof. Donato Lanati, helped by his research centre “Enosis Meraviglia”, which is directed by
Dott.ssa Dora Marchi, we obtain from our grapes four labels, children of the experimentation in vineyard and in cellar, always in search of the best potential of the grapes cultivated in this plot of land.
The scents we smell in our wines come from the sea sand, becoming from prehistoric sea dunes, at 189 metres of altitude above sea level.
