Description
The family run farm, surrounded by 200 hectars of land, sits on a rise overlooking velvety pastures and a gash of wild ravines and scoured cliffs called the balze.
Almost 1,000 sheep graze on organically grown fodder and cereal and produce a perfumed milk, almost completely worked by hand. All this guarantees a series of great cheeses. the pecorino comes from an ancient recipe that is traditional of the tuscan region. Prepared with whole sheep’s milk and veal rennet, the fresh pecorino is left to mature for a long time (up to one year) during which is treated with oil, oil sediment and ash or else with tomato to soften the rind and prevent it from cracking. Whenever pecorino is made, also ricotta is prepared with the whey that is left over after curdling. fresh ricotta is later baked in the oven for about three hours and becomes a new cheese called “tricotta divina” to be consumed within 60 days, excellent as a starter with extra-virgin olive oil and salt and deliciuos as a dessert with honey.
The most celebrated cheese produced on the farm is “pecorino delle balze volterrane”. it is a full-flavour pecorino with vegetal aftertase given by the particular rennet (seeds of wild artichoke), that acquires a strong smell of herring during the ripening.
The extra-virgin olive oil produced by the lischeto farm comes from the first cold-pressing of olives of the frantoio, moraiolo and leccino varieties, organically grown and hand-picked in the period of november and december. The olives are immediately cold-pressed to preserve the quality and nutritional properties of the product, according to a principle of harmony that inspires all the work of the farm: a profound respect for nature and her rhythms.
Lischeto extra-virgin olive oil is a smooth-bodied oil, with an intense perfume, slightly piquant. with a very low acidity it is perfectly digestible.
Ideal on salads it is also good for fried dishes, to which it adds striking aromas.
Lischeto farm can provide tuscan cuisine and tastings of the farm products served in a spacius, rustic dining hall and accomodate guests in the old tuscan farm house which has been recently renovated and divided in doublerooms and fully equipped apartments.
