概要
VINEYARD CULTIVATED SURFACE: ha 00.50.00
GRAPE: The Nibiö grape originates from the Areaof Tassarolo coming from an ancient autochthon of hundred-year-old
plants at the foot of a hill ante-filossera.
PRUNING SYSTEM: guyot.
YIELD: 40 ql. /Ha – Hl. 25/Ha.
GRAPE HARVEST: First half of September. Manual harvest in wooden baskets.
WINE-MAKING: macerated into stainless steel vats at controlled temperature for about ten days, repeated reassemblies
then fermentation, malolactic and refinement into barriques for at least 12 months.
SOIL: calcareous marls, argillaceous, excellent weaving and good presence of minerals.
LANDSCAPE: hills facing South-East, altitude 300 mt. above sea level.
ALCOHOLIC DEGREE: 14,00.
TOTAL ACIDITY: 5,50 g/l.
COLOR: an intense ruby coloured.
FLAVOUR: rounded and embracing with floral and fruity notes. Brings to mind cherry and bramble flavours together with
a light herbaceous and spicy.
TASTE: rich substance extracted, creamy at the palate with loose tannin, of great balance and extraordinary softness.
SERVING TEMPERATURE: 14-16 °C.
COUPLING: red meats, game and main courses
A wine whose name recalls the footprints left by the pilgrims, or Romei, who in the Medieval Ages, came from the
Northen Europe to Rome travelling through this always rich in vineyards area.Obtained with the grapes coming from an
ancient autochthon grapevine by the dialectal name Nibiö,this wine appears strongly structured and tending to the
intense ruby colour.
