概要

Cherry is the fleshy fruit of Prunus Avium, a tree belonging to the family
Rosaceae, originating from Asia Minor, and grown in Egypt from the seventh
century b.C. and afterwards in Greece, whereas in Italy the first evidence of
its presence dates back to the second century b.C. when Varrone illustrated in
detail the grafting method.
Campania is the region where cherries are mostly cultivated. In the Vesuvius
territory, on the slopes of Monte Somma, where its presence as prominent
cultivar dates back at least to the Angevin’s rule, the Cherry tree characterizes
the landscape, especially in Spring when the blossoming offers an enchanting
natural display.
As for the Apricot trees, in the Vesuvius territory are present several cultivars
of cherry trees, whose amount has not yet completely assessed. The most
important varieties are: The Ciliegia Malizia, the Ciliegia del Monte and the
Seconda Nera. This last cherry is particularly suitable to produce jams, as the
fruits are medium-sized, dark red to dark violet with blue highlights, and have
a sweet and very firm flesh.

By processing the children’s most loved fruits, casaBarone produce a jam
distinguished by the character of the cherry variety being used:
The Seconda Nera from Monte Somma.
This home-made jam undergoes a simple processing: washing of cherries, removal
of peduncles, stoning the fruits, and cooking by adding a very small quantity
of pectin to favour thickening, and avoiding thus a long cooking. The result is
a jam which keeps the flavour of fresh harvested cherries.
