概要

The "Caluso Passito" DOC is the most typical wine of our zone. The fame of this "gem enologica of the green Canavese" it's the result
of the scrupulous and impassioned application, handed down to him and sharpened him through the centuries, of the withering of the grape Erbaluce on wood mats.
With it departing from four quintals select grapes, it is succeeded in getting, at the end of the aging, around a hectoliter of wine.
These grapes, hardly junta to maturation, are picked up and you systematize in wide and low baskets, you bring to the places
of withering and lays it on the mats. It begins, in this way, the process of withering that is extended up to half February. With it
concentrations are reached besides 30% in sugars.
To completed withering, grapes normally come vinificate and press. It subsequently begins a slow phase of fermentation in oak
strokes from 350 ls., of the duration of some months. An aging for others four years, five for the reserve, will give the final characteristics
to the wine. It begins so its life, because the Caluso Passito also offers satisfactions to the palate after many years, some decades.
The taster recognizes in this wine the essences of peach, orange, bergamotto, tobacco's perfume, honey, dry fig tree, acacia,
cyclamen and toasted filbert. Combined with dry sweets, but above all meditation wine.
