These particular preserves are obtained only from tomatoes picked at the moment of their optimum ripening in order to obtain both a sweet and sour taste. They are a bright red color and have a pulpous consistency. To the nose it is penetrating and slightly spiced. A full taste with a perfect balance between sweet and sour.
It goes well with fresh cheeses such as mozzarella, ricotta, and robiola, as well as with stewed meats and game.
