Camposcuro Ciliegiolo Passito - IGT Toscana
The harvest is done entirely by hand in small boxes in early September, when the grapes have reached full ripeness. The drying on racks, with direct sunlight and natural ventilation lasts about 30 days, after which follows the stemmer and short maceration in small stainless steel tanks for about 36 hours. The fermentation and maturation in oak barrels lasts about 12/18 months, and later for six months in bottle.
The color is deep golden yellow, tending to amber. The aroma is intense and rich with hints of apricot, dried fig, dates and honey locust. The taste is warm and soft, enveloping and lingering.
It is a meditation wine, produced in limited quantity and it perfectly matches with pastries, chocolate and also with cheese.
Alcoholic grade: 13 % vol.
