Origin
The hills of the small town of Santa Ninfa exposed towards west along the bounderies with the towns of Salemi, Gibellina, Partanna and Castelvetrano.
Density :3500/4000 plants /Ha
Altitude: 300/350 above sea level.
Alcoholic gradation
12% vol.
Organoleptic characteristic
Red wine of average structure with pleasant equilibrium and harmony of taste.
Vinification
The, harvest of the grapes is on the period between 15th and 20th September the grapes are submitted, to maceration for 10/12 days and then to a checked fermentation temperature. Afterwards the wine matures for 7/8 months in steel.
Gastronomic combinings
Appetizers, main courses of meat, game and cheese. To serve at 18-20° C.
