Taggiasche olives are a typical variety of the Ligurian hills; they are pleasant tasting with a tendency to be sweet and agreeably fruity.
They are prepared according to an ancient Ligurian tradition from the best olives after being hand-picked at ripening, then placed in a brine made of water, salt and herbs such as rosemary, thyme, and laurel, giving them their characteristic aroma. With their unmistakable flavor they are ideal for your dishes, which will be enhanced with an old and suggestive flavor. It is excellent for rice salads or for adding extra flavor to the sauces of your first-course dishes. Also ideal with chopped herbs and some olive oil in making unique meat or fish main courses, or simply as the star of your aperitifs.
