Descrizione

Ingredients: Red tuna filet, olive oil, sea salt.
Weight: 10,8 oz – Dripped 6,5 oz / 314 gr. – Dripped  204 gr.

Red Mediterranean tuna is a fish which has prized meat and caught only in the month of May during the period of its migration; for this reason it is also known as “fleeing tuna”. Its distinction derives from the fact that during this migration period its meat is particularly tender and its nutritional values are higher. After being caught it is immediately processed according to traditional methods which are handed down amongst generations of fisherman. In fact, the processing is completely manual and foresees sectioning in slices, each of which is destined to a special transformation. Our tuna, once the delicate steam cooking is finished, in enhanced with salt coming from the famous Mozia salt pans and olive oil from the same area. In the final phases it is manually stored in precious glass jars, all while respecting the strictest laws and hygiene as dictated by the European Community.
