Welcome at farm.
Scalilla is a typical farm, situated in Melendugno, in the heart of Salento, south of Apulia, between Otranto and Lecce. Here, you can find the oldest olive trees, witnesses of history and civilization.
In the respect of nature and old traditions of Salento, our farm produces three different types of extravergin olive oil, vegetables under oil, jams, marmalades, tomato sauce and bakery products.
Further, to those who love country side and peace, we offer the possibility to spend some days of rest . If you decide to spend some days at us you will appreciate our old traditions, our modern way to work the land, our famous monuments, the wonderful beauty of our sea and the folklore of our people.
Scalilla, so called from a local word " scaliddha", which means small stairs, has a very ancient history. The first settlements go back to the XVI century, when the nobles D'Amelj, landowners of Melendugno, built a small tower and a shelter for animals. It was a rural farm which, during the years and with some other owners, became more and more important so that to be signed in all the maps of the time.
In 1958, Scalilla was bought by our family and in about 50 years it has become what today you can see : a modern farm whose first activity is to grow its 9000 trees, to pick their olives and to produce, in our mill, the extra-vergin olive oils. Further, Scalilla offers to its friends the opportunity to spend some days of holidays in total relax and to appreciate, through guided visits and degustations, all its amenities.
THE EXTRAVERGIN OLIVE OILS
DEMETER
Extra virgin olive oil obtained from cultivar "Fabulosa" or Fs17, with a yellow-green colour and a slightly fruity taste of green apple and artichoke. It's a MONOVARIETALE and its taste is very delicate, ideal raw on dishes like carpaccio, salads and soups.
RE DAVID
Extra virgin olive oil from a mixture of cultivar Coratina, Leccino and Frantoio, with a deep green colour and a strong fruity taste of fresh cut grass. Suitable for roasted vegetables and soups
AMPHORAE
Extra virgin olive oil from Ogliarola Leccese and Cellina of Nardò, with a golden yellow colour and a hint of almond cake. Suitable for any dish.
AROMATIZATED EXTRAVERGIN OLIVE OILS
Mediterranean essences and vegetable garden's fruits like garlic, hot pepper, basil, rosemary and lemon, contribute to give to our extra virgin olive oil special tastes which enrich different dishes, from fish to meat, from pasta to pizza, from soup to a simple salad.
FRUITS OF THE GARDEN
In our farm we also produce vegetables and fresh fruits. Artichokes, eggplants, lampascioli ( small wild onions typical of Salento), zucchinis, tomatoes and hot chili peppers are preserved, according to ancient recipes, in our extravergin olive oil. Excellent in every moment of your meal, as hors d'oeuvres or side dishes, we also produce Passata, a tomatoes' sauce with basil, which makes pasta or pizza an unforgettable experience. At last fresh, wild fruits become, in our kitchen, particular jams and marmalades which we propose to our clients for a wonderful breakfast!
