Description
NAME: Barbera Alba cru Ca di Caire
VINTAGE: 2004/05
VARIETAL GRAPE: Barbera
TYPE OF SOIL: Loose and potentially sandy.
HARVESTING PERIOD: From end half September.
VINIFICATION: Grapes are picked up in cassettes by 25 kg and on its way in the same day to the pressing; it is suffered added of the yeast selected for the start of the alcoholic fermentation. This hard 15/18 days with frequent and long pumping over to be able to extract from it peel all the useful noble substances to the aging. After the malolactic fermentation comes started resting in wood barrel of oak from 25 hl and for a small fraction also in barriques.
AGING: After the entrance in commerce up to 24 /36 months.
PRESERVATION: Lain down bottle and to the shelter from the light in fresh environment and to constant temperature.
COLOR: Red intense, impenetrable.
AROMA: Wine, intense, warm and yielded with a light boisè that well it amalgamates to the vinous of one original barbera.
TASTE: Full and round, harmonic and winding, excellent the persistence, to try.
ALCOHOLIC GRADE: 13,50 %vol
PAIRING: Cheeses and second tasty dishes, meats redheads and game, from end meal.
