Description
“Saretta”vineyard of Asti Barbera 2008
It is one the of best hill in Montegrosso d’Asti (Piemont Italy) to produce wine.
The little production of grapes in this vineyard,brings to obtain a wine suited for mellowing.
The grapes is picked up in the first days of October,then it is pressed,put to ferment for about 10 days in inox barrels, with a controlled temperature (about 25/26°).
The wine we obtain is poured off so thus proceeding to malolattic fermentation.
After malolattic fermentation, the wine is put to settle inside slavonia oak barrels of a medium size of 25/34 hl.
The wine stands in these barrels for about 8/10 months, where the wood brings a light oak scent and a full bodied pecularity to the wine.
The wine keeps the typical characteristic of Asti Barbera.
After a light clarification with egg albumin and gelatine,the wine is bottled and it stands for 6 months .
Being a mellowed wine,it is better to taste it within 8/10 years.
