Ingredients:  100 % heated ewe’s milk, salt, rennet, milk enzymes

Ripening: 240/360 days at cellar temperature

Description:  This is a white, slightly open-grained pecorino cheese with a full delicate taste ripened under a protective covering of olive oil sludge.

A table cheese , delicious served with honey or jams accompanied by dessert wines or

a full-bodied red wine 13°-13,5° .
