Description

Production: in central and southern Italy, where the eucalyptus trees were planted as windbreaks or for reforestation.
Color: from clear to medium amber, crystallized tends to gray.
Crystallization: fine-grained, uniform and compact texture.
Smell: intense, dried mushrooms, wet wool.
Taste: Strong, like the smell, but more pleasant, reminiscent of the caramel, malt.
Properties: natural sedative for cough, anti-asthma and antibiotic properties. It is widely used in the treatment of blisters caused by chicken pox, herpes and shingles (fire of Saint Anthony).
Uses: as table honey must be used with slightly acidic and savory cheeses: Pecorino from Ragusa or from Rome, Fiore Sardo, also excellent with Grana and Parmesan.
