Mulberry Jam

Fiche technique

Description

Mulberry tree belongs to the family of the Moracee and originates from East Asia. This plant was imported to the Mediterranean area and was domesticated for the cultivation of the silk-worm and for the delicious fruits (Morus celsa) in the two varieties alba and nigra.
In ancient times, people believed that the fruits could be a remedy to treat some diseases. Plinius reports that by wearing the unripe fruits of black Mulberry, one could stop hemorrhages, whereas with ripe fruits the ancients prepared Arteriace a remedy alleviating swellings in the throat and in the channel of the gullet. Very often people confuse the two mulberry varieties. It must be said that in comparison to the white variety alba , the fruits of the black variety are more juicy and refreshing.
The long rows of mulberry trees, abounding till the half of last century, were cut down due to the end of silk-worm cultivation. Nowadays, only isolated trees are surviving, but in some Italian regions the black mulberries are still used to prepare delicious sorbets, syrups and jams.
Formerly, the white and black mulberries were sold by the street vendors in the narrow streets (vicoli) of Naples. This street vendors came from the Vesuvius territory, carrying a large hamper of fresh mulberries picked up at the break of dawn and kissed by the morning dew.
•Black Mulberry jam•
This product aims at rediscovering and promoting a nearly forgotten fruit: the black mulberries. This home-made jam undergoes a simple processing: selection of fruits, removal of peduncles and cooking of the unbroken berries, and adding a small quantity of sugar when boiling down. This jam has a taste of all its own, and is a real gourmet delicacy, in which the unbroken berries predominate in a thick syrup. It can be used to decorate ice creams and sweet desserts or can accompany fresh or ripe cheese.
