Description
The preservation of tomatoes was at one time widespre adamong the people of the Vesuvius territories. Tomatoes were cut lengthwise in filleted strips, (the so-called pacchetelle),and pushed patiently into the bottles to fill them up. Thebottoms of the bottles were attentively hit by hand on awrapped cloth, to tighten the tomato strips, avoiding thus the product decrease and vacuum creation arising from the boiling. Bottles were corked and tied up, and boiled for about one hour in large cauldrons. According to yesterday’s traditions, today casaBarone propose their traditional bottled organic tomatoes Vesuvius: completely ripe tomatoes, harvested at the end of July, put in wooden boxes to let them dry, processed and bottled by hand, secured by screw caps, and as a final step,pasteurised by means of the modern technology.
