- Area : north of Apulia (Family estate "MACCHIE", Molfetta – Giovinazzo - Terlizzi);
- Crop method : hand-picked;
- Crop season : at the best stage of ripeness starting from the middle of october up to the end of december
- Olives variety : 80% Coratina - 20% Ogliarola;
Production Process:
- Cleaning : by striping the olive leafs and washing;
- Pressing : by crushing in the great stone oilve mills;
- Kneading : by cold working;
- Extraction : by cold pressing;
- Quality control : laboratory analysis and organoleptic assesstment;
- Storage : steel silos with a temperature constant to 13-18° C;
- Bottling : In breezy and clean rooms according to the directives of the health care depatment.
Use :raw salads, bruschette, roast grilled fish, vegetables, especially good for frying food
