Description

IT' S A CHEESE, HARD AND COOKED PASTE, MADE FROM WHOLE SHEEP'S MILK, CURDLED WITH LAMB'S RENNET AT 42°C. WHITE PASTE WITH LIGHT OCELLATION. CHEESE FLAVOUR IS AROMATIC, WITH A CHARACTERISTIC SPICY AND SAVOURY TASTE. CYLINDRICAL IN SHAPE, IT CAN BE SUBMITTED WITH BLACK CRUST. THE WEIGHT MAY VARY BETWEEN 20 AND 25 KG. IT IS FOR TABLE USE STARTING AT 5 MONTHS, AND AS GRATED AT 8 MONTHS.
