Vinification: fermentation in steel tanks at the temperature of 28/30° for about 15 /20 days. To increase transfer of substances from skins of the grapes, re-passings and fullings of must over the grape dregs are performed twice a day.

Maturation : 14 months in oak barrels 225liter coming from French Central Massif .

Fragrance : wide, complex, very deep with little wood fruit and spices aromas.
Flavour : dry, full of body, persisting, very round fleshy, very mellow with lasting and wide leaving taste
Gastronomy : it goes well with savoury and important dishes prepared with red meat, game, venison and flavoured cheeses
Service : to be unkorked two hours before serving and possibly decanted.
