The characteristics are those of classic Nebbiolo: an elegant garnet red colour, a bouquet that's flowery (roses and geraniums), fruity (raspberries and wild strawberries), and spicy (Cinnamon and vannilla), rounded off by a long, warm, full-bodied flavour. This Nebbiolo is grown on the hills of Diano d'Alba, on slopes at an altitude of more than 500 metres where the sun spreads its light and warmth longest over the vines. The process is comleted in the wine cellar, where the bunches are crushed and de-stemmed before the must ferments slowly on the skins. The wine then matures in small barrels for a prior to be bottled. Following several more months of ageing it is finally ready to take on the challenge of accompanying dishes with strong aromas and flavours, especially red meat and mature cheeses.
