"Sorba" is a "Sorì" - the local dialect name for a sunblessed hillsouth facing south - in Diano d'Alba.
Here at an altitude of around 510 metres, dolcetto produces its best fruit: succulent, ripe bunches that the winery transforms following a tried and tested process. After soft pressing, the must ferments on the skinsfor several days at a controlled temperature. The wine then matures in steel, before ageing in bottles stored lying down in the cellars underground. Only produced in great vintages, the impresive characteristics expressed by Dolcetto di Diano d'Alba sorba have won it awards in Italy and abroad: ruby and violet hues: a bouquet of cherries, blackberries and jam; and an intense, lingering taste, with a nicely bitterish finish.
