Sestosenso Vin Santo Occhio di Pernice DOC
The harvest takes place in early October, ahead of full maturity of all the clusters, to choose the best grapes. The drying is done on mats or, more rarely, on wires hanging in naturally ventilated rooms. The grapes are pressed and the juice, separated from the pomace, is fermented in small sealed barrels. The barrels are kept for at least 3 years in the basement ceiling, where the temperature range between day and night, especially between summer and winter, allows the ‘Eye of Partridge to acquire special aromas. The aging in the bottle lasts about 6 months.
Fascinating color almost iridescent. Sometimes amber, dark, impenetrable brown. Then, depending on the angle, quick flashes of ruby and garnet, that remind its origins from black grapes. The nose notes of dried figs and plum jam stand on a balsamic background of great elegance, with hints of cinchona, rhubarb and then cloves and licorice stick … If the nose is elegant, the taste is no less impressive: dark and fruity but also soft, silky and with great persistence.
Sipping wine that matches perfectly with jam or chocolate tarts.
