Afrodite is among the richest oil in poliphenols. A great extra virgin olive oil contains 100 to 250 mg. of polyphenols for kilo Afrodite have 560 mg/kg.
Scientific researches has experimentally shown that the quality of oils extracted from pitted olives is higher than the corresponding oils obtained from whole fruit. The olives are harvested during partial ripening and milling within twelve hours later, using the two-phase extraction technology, without the addition of hot water during kneading.
Aphrodite has been appreciated by the chef Heinz Beck and it is on the list of the oils of the restaurant “La Pergola” in Rome, which he directed; awarded by the guide SLOW FOOD 2008/2009/2010.
