Production area:
municipalities of Castelvetrano, Campobello di Mazara, Partanna, and is one of the few examples in the world for homogeneity of soil and climatic conditions and varietal.
The variety and climatic conditions have allowed the development of a cultivar indigenous Nocellara of Belize, that only in this environment exerts all its productive potential.

Processing technology:
Harvesting is by hand with cold extraction in a continuous loop.

Characteristics:
color: green with golden hues
Aroma: Intense fruity with notes of fresh grass, artichoke and tomato
Taste: fruity, aromatic olive oil and a strong composition. The flavor and spicy blend with the pleasant bitterness
The oil is characterized by low acidity (0.20 to 0.5%), with an excellent shelf life, flavor of fruity olive oil and a strong aromatic composition.

It is recommended for use:
of raw vegetables, salads, vegetables, soups, fish;
in cooking roast meats, fish, sauces and pastries
