Descripción
Typical "classic" Bolognese wine, growers’ and winemakers’ flagship in our area. The color is clear, the fragrance is unique, intense, delicate, almost spicy, the taste is dry. Alcoholic, may also be sweet. The Pignoletto is worked to achieve both sparkling and effervescent wines, dry wines. Sparkling wine is produced in both the traditional method and charmat method.
Production area : Castello di Serravalle Bologna ITALY
Grape varieties : Pignoletto 90% and non-aromatic grapes 10%
Altitude : 220 – 350 m a.s.l.
Training system : unilateral spurred cordon
Harvest period : end of August, beginning of September
Ageing : in stainless steel barrels
Refining : in stainless steel barrels
Sugar content: 10 gr/lt
Total acidity: 6,10 gr/lt
Colour : faded straw yellow whit greenish reflexes
Perlage: delicate and persistent
Bouquet:delicate,fruity,intense aroma of hawthorn flowers
Taste : dry but slightly sweet,aromatic and rather persistent,fresh acidity
Serving temperature : 8°-10° C
Alcohol: 12,5 % by vol
Best with : excellent as aperitif; good with all kind of meals; dessert and as toast.
