Descripción
Fumin is a historic variety native to the Valle d'Aosta and already documented by Lorenzo Gatta in 1838.
The bunches of Fumin, from small to medium, have a pyramidical form with a dark plum-like colour to the grape skin, of good consistency and dark opaque blue when mature.
Colour: The wine appears a full crimson red with intense mauvish shades.
Nose: intense and persistent, with spicy notes and hints of red fruit including mature cherries.
Taste: complex and full, warm, soft with elegant tannins that give a full-bodied smoothness.
Ageing: the wine is aged for a year, 50% in steel and 50% in oak.
Accompaniments: goes well with game, red meats and well matured cheeses. Good also as a vino da meditazione - to be savoured slowly on its own.
Serving temperature: 18°-20°C (64°-68°F), open an hour before serving.
Notes: lends itself very well to ageing (3-5 years) provided it's laid down in suitable conditions at a constant temperature of 10°-15°C (50°-59°F) and not exposed to light.
