Allevamento della Montagnola Senese: the cinta race

 

The ‘cinta senese’ is an old italian pig’s race breeded since long time in open corrals in the area of Montagnola Senese woods. The first witness can be found in a famous fresco painting by Ambrogio Lorenzetti, dated 1338, that is entitled “Buongoverno” (The good public government) and is located in the public main palace in Siena.

In the 70s of last century the race risked to estinguish and there were only a few heads remained; nowadays there are about 3000 labeled animals, listed in a public register managed by the Cinta Senese Tutorship Consortium that has defined specific rules about the way to breed this race and that keeps the public register listing the sealed heads responding to specific morphological charateristisc.

The race produces meat that is labelled as a PDO (Protected Designation of Origin) named Suino Cinto Toscano.

By crossing the cinta race with the large white is obtained the traditional grey of the Montagnola Senese that made famous the Siena Province in the early XXth century and that merges the the flavour of the cinta meat with resistance and prolific large white.

 

The Allevamento della Montagnola Senese is based in wood and pastures in the counties of Casole d’Elsa and Monteriggioni, extending over more than 100 ectars within the Organic farm Scorgiano Azienda Agraria.

Pigs are born and grow in the wild throughout the year and are fed by grazing food as acorns, chestnuts, wild fruit and herbs.

In addition to this food is integrated with flour mixture prepared in a farm mill with organic grains grown directly in the farm fields; these mixtures are varied seasonally and following the status of animal growth.

Consistency of the breeding is among the 800 and 1000 heads, mainly of Cinta Senese race (about 2 / 3), but also large white, landrace and duroc and the traditional gray cross.

With all the various species are produced sausages, hams and salami that are offered both to the markets of Tuscan restaurants, as well as individuals.

In all cases the quality that comes from the method of breeding is found in processed products allowing to find flavours of the past that are hardly found on our tables.
